Spaghetti with Bison Bolognese
Prep & Cook Time: 1 hour & 10 minutes • Yields: 2-4 servings
Ingredients:
Bolognese Sauce:
1 pkg. Fossil Farms' Bison Ground Meat, 1 lb.
2 tbsp. olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
1 medium carrot, finely chopped
1 celery stalk, finely chopped
¼ cup dry red wine
1 can (14 oz) crushed tomatoes
½ cup whole milk or heavy cream
¼ tsp. dried oregano
¼ tsp. dried basil
¼ tsp. red pepper flakes (optional)
Salt and pepper to taste
Spaghetti:
12 oz Spaghetti (or preferred pasta)
Optional: Freshly grated Parmesan cheese
Fresh Basil
Equipment:
Measuring cups and spoons
Stove
Large skillet or sauté pan
Large pot (for boiling pasta)
Strainer
Wooden spoon or spatula

Method:
Prepare the Bolognese Sauce:
1. Heat 2 tablespoons of olive oil in a large skillet or sauté pan over medium heat.
2. Add the chopped onion and sauté for 3–4 minutes until softened.
3. Add the garlic, carrot, and celery, and cook for another 5–6 minutes, stirring occasionally until the vegetables are tender.
4. Add the ground Bison meat, breaking it up with a wooden spoon. Cook until browned all over, about 6–8 minutes.
5. Pour in the red wine and let it simmer for 2–3 minutes, allowing the alcohol to cook off and the flavors to meld.
6. Stir in the crushed tomatoes, milk or cream, oregano, basil, red pepper flakes (if using), and salt and pepper to taste.
7. Reduce the heat to low, and let the sauce simmer for 30–40 minutes, stirring occasionally, until it thickens and the flavors develop. Adjust seasoning as needed.
Cook the Spaghetti:
8. While the sauce is simmering, bring a large pot of salted water to a boil.
9. Add the spaghetti and cook according to the package instructions, typically about 8–10 minutes, until al dente.
10. Reserve a small cup of pasta water, then drain the pasta in a strainer and set aside.
Assemble the Dish:
11. Once the sauce is ready, toss the cooked spaghetti directly into the pan with the Bolognese sauce.
12. Stir to coat the pasta evenly with the sauce. If the sauce is too thick, add a small amount of the reserved pasta water to loosen it.
13. Serve immediately, topped with freshly grated Parmesan cheese and a sprinkle of fresh basil if desired. Enjoy!
