Elk Stuffed Mushrooms
Prep & Cook Time: 45 minutes • Yields: 2-4 servings
Ingredients:
Stuffed Mushrooms:
1 pkg. Fossil Farms' Elk Ground Meat, 1 lb.
12 large cremini or white
mushrooms (stems removed and reserved)
2 tbsp. olive oil
½ medium onion, finely chopped
2 garlic cloves, minced
¼ cup breadcrumbs (panko)
¼ cup grated Parmesan cheese
2 tbsp. fresh parsley chopped
¼ tsp. dried thyme
¼ tsp. dried oregano
Salt and pepper to taste
Optional: ¼ cup cream cheese or goat cheese
1 tbsp. balsamic vinegar
Freshly parsley, chopped
Grated Parmesan cheese

Method:
Prepare the Mushrooms:
1. Preheat the oven to 375°F (190°C).
2. Clean the mushrooms with a damp paper towel and carefully remove the stems. Set the mushroom caps aside on a baking sheet.
3. Finely chop the mushroom stems and set them aside for the stuffing.
Cook the Elk Meat Filling:
4. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
5. Add the chopped onion and garlic, cooking for about 3 minutes until softened.
6. Add the ground Elk meat to the skillet and cook, breaking it up with a spoon, for 5–7 minutes, until fully browned.
7. Stir in the chopped mushroom stems, breadcrumbs, Parmesan cheese, parsley, thyme, oregano, salt, and pepper.
8. Continue cooking for an additional 3–4 minutes until the mixture is well-combined and heated through.
9. If desired, add the cream cheese or goat cheese and balsamic vinegar to the mixture for added richness and flavor. Stir until well-combined.
Stuff the Mushrooms:
10. Using a spoon, carefully stuff the mushroom caps with the Elk meat mixture. Press gently to pack the filling into each mushroom.
Bake the Stuffed Mushrooms:
11. Place the stuffed mushrooms on the baking sheet and bake for 20–25 minutes, or until the mushrooms are tender and the filling is golden brown on top.
Optional: After baking, you can broil the mushrooms for 1–2 minutes to get a crispy, golden top.
Garnish and Serve:
12. Once the mushrooms are done baking, remove them from the oven and garnish with fresh parsley and grated Parmesan cheese if desired.
13. Serve warm as an appetizer or a main dish with a side of greens or a light salad. Enjoy!
