Apple Chutney

Ingredients:
3 Honey Crisp Apples - peeled, cored, and finely chopped
1/8 red onion, diced small
1 in. piece fresh ginger root, peeled
2 tbsp. apple cider vinegar
1 tbsp. white sugar
2 tbsp. brown sugar
1/8 tsp. cinnamon
1/8 tsp. white pepper
1/8 tsp. ground cardamom
1/8 tsp. ground nutmeg
1 cup orange juice
1 tbsp. whole dried mustard seeds

Method:
1. Combine the apples, onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, pepper flakes and salt in a large saucepan.
2. Bring the mixture to a boil over medium-high heat, stirring occasionally.
3. Reduce the heat to simmer and continue cooking, stirring occasionally, for 50 minutes to 1 hour, until most of the liquid has evaporated.
4. Remove from the heat and add the raisins.
5. Set aside to cool and store covered in the refrigerator for up to 2 weeks.
