Roast Duck

How many times have we heard the phrase “it tastes like chicken”? People always use chicken as a benchmark because it has an incredibly mild taste and takes on the flavor of whatever you are cooking it with. You wouldn’t just salt and pepper a chicken breast the way you would a local angus ribeye steak. The question remains, why always use chicken when there is much more flavorful poultry available?

Semi-Boneless Quail
Quail is an outstanding alternative to chicken. This small game bird is only around 5 ounces on average and, with every diner getting their own bird or two, makes an amazing presentation on the plate. While how it looks on the table is important, the most important thing is the taste, and quail is no slacker. Its smaller size concentrates the flavor and makes it the star of the plate.
Squab

Squab is another great choice when looking for a chicken alternative. This diminutive bird is a young pigeon which is best compared to the dark meat of chicken. Unlike chicken, squab is best cooked to a medium-rare to medium-well doneness.

While chicken is still a great protein to have, there are other birds that are a must try, and we would be surprised if they weren’t added to your regular diet. Take a walk on the wild game side, we are sure you’ll like it.
