The bite of bison package is great. The meat is incredibly tender and tastes fantastic. The price is a steal for what you get. I turned the short ribs into bourgignon, I pan seared the strip loin, and the flank I used for steak frites. All of the meats were expertly cut and trimmed which I appreciate as a fellow butcher.

Bison back ribs
This was my second order of these delicious ribs. I gave up pork ribs and was looking for an alternative to just eating beef ribs. I have found my preferred alternative. When prepared low and slow, absolutely better than beef ribs, although the texture is similar.

The way pork use to taste
I haven't had pork with flavor for almost 50 years. I was transported back in time with the delicious flavor and beautiful pink color of this pork. It's a bit pricey for my budget, but I make it work. Quality real food is worth it.
