My wife was interested in repeating our New Years Eve wild game night this year so we picked up a few favorites (gator tenderloin, elk medallions...etc.) and decided to grab a starter kit too. Boy, is this a package worth jumping on! I had the bison strip steak for dinner that night and it was the best I've had...ever. I sous vide'd it @ 134 degrees for an hour and finished it in a cast iron skillet: Perfection.
It's such a nice selection: The bison steak, elk medallions, gator tenderloin as well as ostrich steaks (2) and a whole squab!
You HAVE to try this!

I buy these for my son. He loves them. They are very tender and have a mild flavor. Kangaroo is also a very good source of carnitine in addition to all of the other great nutrients that red meat provides.
