Our Story
Humble Beginnings
In 1995, brothers Lance and Todd Appelbaum experienced game meat for the first time. Impressed by the taste of these healthy and sustainable meats, they returned home with a vision to raise Ostrich and Bison on the East Coast.
Lance recalls, “Growing up, my brother [Todd] always wanted to be a farmer, and I always knew I wanted to run my own business. Right then and there, we realized, this is what we gotta do.” Just two years later, Fossil Farms was founded.

Our Squabs are raised in California, where we've partnered with experienced farmers to produce the highest quality squabs in the world. Fossil Farms' Squabs are 100% all natural and part of the “Never Ever Program,” where antibiotics, hormones and steroids are never used. They are fed an all vegetarian diet and have direct access to natural spring water. These free roaming squabs taste similar to dark chicken meat and have the silky qualities of duck. Great tasting bird. Cut in half after cooking. Simply delicious with only salt and pepper.

very good quality

it was very delicious! the breast is sort of like the meat of a quail and the wings & legs are sort of like chicken wings. The first time i ever tried squab was from Fossil Farms. had wanted to try it for a long time but as you can imagine, it's hard to find. For this tasty delicacy, it's definitely worth the every penny of the pricetag.
