Humble Beginnings
In 1995, brothers Lance and Todd Appelbaum experienced game meat for the first time. Impressed by the taste of these healthy and sustainable meats, they returned home with a vision to raise Ostrich and Bison on the East Coast.
Lance recalls, “Growing up, my brother [Todd] always wanted to be a farmer, and I always knew I wanted to run my own business. Right then and there, we realized, this is what we gotta do.” Just two years later, Fossil Farms was founded.

NZ Venison NY Strip Loin

New Zealand Venison is the most tender and delicious Venison available. Our New Zealand Venison Strip loin is fully trimmed so you don't have to. Perfect for roasting whole or portioning into strip steak medallions. For a tender and juicy eating experience, cook no more than medium-rare. Try marinating for 12 hours with 1 teaspoon of each – black pepper, chopped garlic and chopped onion; 1 tablespoon of each – soy sauce, Worcestershire sauce and lemon juice.

Awesome Product

This venison has been fantastic, and it has been that way consistently. We have placed multiple orders, and we have been very happy with the product we received. My students are using it for a competition. The flavor and texture are outstanding. Very lean, but still very tender and flavorful.

Phenomenal cut and very tender

Cooked this strip loin sous vide to 130, then seared it and served it with a blueberry/blackberry/balsamic sauce. Excellent quality meat, great taste and texture, and sadly there were no leftovers.

Delicious

Tasty and plenty to go around for dinner.

I have enjoyed this cut of meat before, but this time I tried a different cooking method and it literally just melted in my mouth. As always great products!!!
