Our Story
Humble Beginnings
In 1995, brothers Lance and Todd Appelbaum experienced game meat for the first time. Impressed by the taste of these healthy and sustainable meats, they returned home with a vision to raise Ostrich and Bison on the East Coast.
Lance recalls, “Growing up, my brother [Todd] always wanted to be a farmer, and I always knew I wanted to run my own business. Right then and there, we realized, this is what we gotta do.” Just two years later, Fossil Farms was founded.

My son and his GF said that it was very good. I suggested that they brush with maple syrup and cracked black pepper, next time, to spice up their slice. 😁

Not belly bacon. Second order. Minimal salt. Been enjoying this as a substitute for the traditional pork I’ve grown up on.
Used it on salad wrapped a fillet on the grill…may throw it on my smoker briefly for sure next.
Good switch. Try it. Don’t overcook and save the renderings, the butter, for whatever till you get your next slab.
