Our Story
Humble Beginnings
In 1995, brothers Lance and Todd Appelbaum experienced game meat for the first time. Impressed by the taste of these healthy and sustainable meats, they returned home with a vision to raise Ostrich and Bison on the East Coast.
Lance recalls, “Growing up, my brother [Todd] always wanted to be a farmer, and I always knew I wanted to run my own business. Right then and there, we realized, this is what we gotta do.” Just two years later, Fossil Farms was founded.

Our Rabbits have a mild flavor similar to chicken. However, the ratio of meat to bone is better than chicken. Rabbits are one of the most environmentally sustainable animals on the planet. Being naturally cholesterol free makes Rabbit a heart healthy choice. Roast with white wine or stock to keep the lean meat of the Rabbit flavorful and juicy.

Tender wild gane

Tender rabbit with no gamy taste to it, Couldn’t eat it fast enough. Fried all the pieces.

Tastes like nothing

I understand that these are farmed rabbits & not wild, but there must be a way through their diet perhaps to give the meat a nice flavor. I cook a very flavorful dish with this & the taste of nothing rabbit took flavor away from it. Past that meat was shipped well in proper packaging & arrived frozen as it should. Would not recommend spending $35 on this product.
