Our Story
Humble Beginnings
In 1995, brothers Lance and Todd Appelbaum experienced game meat for the first time. Impressed by the taste of these healthy and sustainable meats, they returned home with a vision to raise Ostrich and Bison on the East Coast.
Lance recalls, “Growing up, my brother [Todd] always wanted to be a farmer, and I always knew I wanted to run my own business. Right then and there, we realized, this is what we gotta do.” Just two years later, Fossil Farms was founded.

Our Ground Ostrich is pure meat. We never add any fillers. This Ground Ostrich has a blend of less than 5% fat and is greater than 95% lean. The Ground Ostrich is the perfect substitute for any ground beef recipe. Cook to medium-rare to keep this lean meat juicy and flavorful.

The meat arrived in good shape. Yeah I froze. 1 pound and cooked the other pound. it was delicious. There seems to be no fat.
