Mark Brandenburg Many years ago, I enjoyed the occasional ostrich burger at Fuddruckers. That was ground ostrich, of course. Fossil Farm's Ostrich Steaks are so much better! Although the meat contains very little fat, it's surprisingly tender and flavorful. The steaks are a beautiful deep red color and have a nice sheen to them. Note: Be careful when handling them with your bare hands, as they're somewhat slippery. I season them with just a little bit of salt and some garlic - Delicious!
