Braise the Elk Osso Buco low and slow for tender, fall-off-the-bone awesomeness! Our Osso Buco has a ton of meat and the bone marrow is intact. Sear on both sides until golden brown. Cover with stock and finish in the oven at 300F for about 2 to 3 hours.

Fossil Farms sources our Elk from family-owned farms in New Zealand and Canada. The Elk graze naturally on grass, plants, leaves and bark. Our New Zealand Elk are 100% grass fed and grass finished. Our Elk Osso Buco is a part of the “Never Ever Program,” where antibiotics, steroids and hormones are never used.

Elk has more protein and less cholesterol than beef, pork, and even chicken. Elk is a great red meat alternative and a good source for iron, phosphorous and zinc. Elk tastes like a cross between Venison and Beef and is similar to them in color.

Makes great Osso Buco with some elk medallions added

Elk meat, in general, is delicious whether grilled as a steak, used in a burger or meat pies, or turned into a any permutation of a stew. I've never made braised stews before but I think now that's the preferred method. These shanks are generous in size and have plenty of meat on the bone. My favorite Osso Buco recipes come from hunter/angler blogs - those folks definitely know their game.

Red wine and time made this cut a real treat. Love elk and this cut had a milder “game” flavor than the medallions but much richer.

Wild game perfection

Not kidding when I say the only red meat in my kitchen is wild game. It's the only red meat in my diet. Some of the best meats require a bit of attention, a process I love while in my kitchen. I prefer low and slow techniques to render the most flavorful and easy to eat, (chew), not mention getting incredible tallow and bone stock.
