You can roast the Berkshire Pork Frenched Rib Rack whole or cut between the bones to create amazing bone-in pork chops. In addition, we source this rib rack from family-owned farms that raise Berkshire pigs outdoors on pastures, giving them access to forage in Iowa and New Jersey. As part of the "Never Ever Program," these pigs never receive antibiotics, steroids, or hormones. Additionally, Berkshire Pork stands out for its high fat content, and fat equals flavor. The meat is a dark pink to red hue, with heavy marbling.

Berkshire Pork comes from a heritage pig breed that originated in Berkshire County, England. Later, in the nineteenth century, farmers introduced these pigs to Japan and the United States. In Japan, people refer to them as Kurobuta Pork, considering them the best tasting, most high-quality pork available. Compared to conventionally raised pigs, Berkshire pigs grow slowly, taking almost twice as long to reach full development.

The way pork use to taste

I haven't had pork with flavor for almost 50 years. I was transported back in time with the delicious flavor and beautiful pink color of this pork. It's a bit pricey for my budget, but I make it work. Quality real food is worth it.

After receiving whole rack, submitted question to Fossil Farms twice about cutting them up into chops but never got a reply

Was great in the smoker

Rubbed with dijon mustard and a pork rub overnight then smoked at around 225. Came out great and was enough to feed 12 and give everyone a small chop. I will be doing this again for sure.
